Shortbread Cookies


  • 1/3 cup coconut oil, melted
  • 1/4 maple syrup or honey
  • 1 tsp vanilla
  • 1/4 tsp baking powder
  • 1 cup almond flour
  • 1/4 cup coconut flour

Preheat oven to 350*F. Mix the wet & dry ingredients separately, then combine. Stir until everything is well incorporated, and a thick dough forms. Roll into small, grape sized balls, and place them on a baking sheet. Use a fork to create a criss-cross pattern, lightly smushing the dough down. Bake for about 15 mins, or just until the edges start to brown. Enjoy!
