Crunchy Rice Cereal Bars



  • 1/2 cup nut butter
  • 1/4 cup maple syrup/honey
  • 1/4 cup coconut oil
  • splash of vanilla
  • 1/2 cup (4 scoops) collagen peptides (or protein powder)
  • 2 tbsp chia seeds
  • cinnamon
  • 2 cups puffed rice cereal
  • 1/4 cup dark chocolate, melted


Mix all ingredients (except puffed rice + chocolate) in a large bowl. Once everything is well incorporated, food in the puffed rice. Spread the mixture into a parchment lined, square baking dish, making sure it’s even and flat. Pour the melted chocolate on top, and spread with a rubber spatula. Sprinkle desired toppings over while the chocolate is still wet. Refrigerate, and cut into bars once the chocolate hardens 🙂 Enjoy!
