Cinnamon Chocolate Chip Muffins

3 eggs

1/4 cup melted coconut oil or butter

1/2 cup maple syrup

1 tsp vanilla

1 tbsp cinnamon

1 ½ cup oat flour

½ cup collagen

1 tsp baking powder

1/4 tsp salt

¼ cup DF chocolate chips

¼ cup chopped walnuts (optional)


Whisk together the wet ingredients, and slowly incorporate the dry. Fold in the chopped nuts + chocolate chips. Bake in silicone or lined muffin tin at 350 for about 15-20 mins, until a toothpick comes out clean.
